A true classic big on flavour, this wonderful choice cut of beef rib is characterised by its natural fat covering and succulence from being matured and cooked on the bone. Perfect for yourself or a generous steak dinner for your family and friends.

PAN FINISHING OPTION:

1. Remove Beef from the refrigerator for at least 30mins prior to cooking to get to room temperature.

2. Preheat a nonstick pan on medium-high heat.

3. Open bag, remove Beef, gently scrape off excess fat and carefully pat dry on both sides with a paper towel. Discard bone guard on the tip of the bone.

4. Only when the pan is hot, add one tbsp of regular oil (vegetable/canola), and carefully add the Beef for about 60-90secs per side - until each side is well browned.

*Tip: You may opt for butter, but regular oil has a lower smoke point and is less likely to burn. Try half butter, and half regular oil.

5. Remove from heat, let the Beef rest for a couple of minutes before slicing. Serve with mustard and you’re ready to go!

*Pro-tip: Finish this on the BBQ.

OVEN FINISHING OPTION:

1. Remove Beef from the refrigerator for at least 30mins prior to cooking to get to room temperature.

2. Preheat oven to 230°C on grill fan (broiler). If oven does not get that hot, amend to a longer finishing time with lower heat.

3. Open bag, remove Beef, and carefully pat dry on both sides with a paper towel. Discard bone guard on the tip of the bone.

4. Once the oven is hot, on a tray and parchment paper, place the Beef on the upper rack and allow it to cook for 3-5mins - until a char begins to form. Each oven is different, so you will have to monitor the timing.

5. Once char has formed, allow the Beef to rest for a couple of minutes before slicing. Serve with mustard and you’re ready to go!
