If you’re looking for something else besides turkey this Christmas, three words: sous vide ham.  Well – we got that part down for you. Just finish in the Oven for 15-20mins and you’ll be carving into this sweet piece of freshly cooked ham in a shocking amount of time! Brined for 5 days and sous vide cook, its like a cold and hot spa for our hams.

Boneless Gammon Ham:

Portion: 1PKT – 1.5KG+/- (4-5PAX) – $80 comes with 1PKT of maple honey glaze.

1PKT – 2.5KG+/- (8-10PAX) – $140 comes with 1PKT of maple honey glaze.

To Keep: Store refrigerated (not frozen) in sealed pouch for up to 21 days while retaining freshness. If opened, keep in fridge for a couple days max. 

To Eat: Leave pouch out to get to room temperature and fire up in the Oven for 15-20mins . Detailed guidelines are provided with delivery of each product and is also online (scroll down).

Description

Remove the pouch from the refrigerator and leave it out to sit @ room temperature for at least 45MINS before cooking. *Tip: Cold meat does not heat up evenly, so make sure it’s close to room temperature prior to heating

Preheat the Oven for 10-15MINS to 250°C on fan-forced. *Tip: If Oven does not get that hot, amend to a longer finishing time with lower heat.

Open the bag, remove the Ham and carefully pat dry on both sides with a paper towel. Apply a thick layer of provided glaze to the ham.

When the Oven is hot, on a tray with aluminium foil, place the Ham on the upper rack and allow it to cook for 10mins before taking it out to apply another layer of the glaze. Cook for another 5-8mins before taking it out. Each oven is different so you will have to monitor the timing.

Once a glaze has formed, allow the Ham to rest for a couple of minutes before slicing. Serve with our Fig & Penja Pepper Chutney and you’re ready to go!
